My Happiness Jar

Homemade tofu! I had to really work at perfecting the art of tofu. I screwed up more times than I can remember. Each time a batch turns out I feel like a tofu warrior or maybe a chemist.

My Happiness Jar

Today I had a headache, I am used to headaches. I knew I would get one eating a salad at our local burger joint yesterday and doing detox. Even though I had a headache I found happiness sorting beans I grew this year. I grew Appaloosa, Mayflower, and Tender bean. I find it soothing to sit and shell beans while I listening to an audio book. Right now I am listening to an audio book I read when I was a teenager by Michael Moorcock, The Chronicles of Castle Brass. It’s all about adventures with time travel.

Beans for this years garden
Beans from last years garden

for next years garden.

Detox Month – Dinner

I had a horrible headache today, mostly likely from the salad I ate at the restaurant we dinned at yesterday. Most of the time restaurants unless stated do not serve organic food. I ate a bunch of kimchi  for lunch today with my soup and rice and the headache is finally gone. That is the price one pays when eating clean for so long. Industrial food kicks one’s ass very quickly. I have had absolutely no cravings today. I wonder how long that will last?

For breakfast I made buckwheat and kelp biscuits, I am reluctant to post this recipe because these biscuits are an acquired taste. I’ve drunk sage, oregano, and lemon balm tea all day, yummy!

I first rinsed and soaked brown rice for a couple of hours. Liquid used to cook rice was from this years canned tomatoes I added tomato juice and cooked rice until tender. One cup of rice to two cups of liquid, 1/2 tsp of salt, add lid to cover cooking rice, cook at medium low until liquid is gone, remove from heat, stir rice and let sit. You can freeze or refrigerate and use this rice for what ever meal you wish.

I buy my organic rice in 20lb bags from our local organic cooperative. As I stated in previous blogs buying in bulk saves me 30 to 50% on my food bill.

I added some of my gardens canned hot peppers and the rice I cooked up to the soup I cooked last night. This meal hardly took any effort and is very inexpensive. Soup Recipe

Detox Diets Don’t Work

A friend pointed this out to me and I have read several articles regarding detox diets don’t work. Maybe the fad stuff you see for sale, detox in a pill or bottle, convenient and fast detox. But cutting out known toxins like sugar, processed foods and drinks is detoxing. They act just like drugs read,” Salt Sugar Fat.” I read this book and it is backed up with scientific facts and citations for further research. Our modern diet has been fashioned to addict us and is empty of nutrition and full off toxic chemicals. That is why we are getting fat, sick, and depressed.

Detox diets are really detoxing us from addictive processed foods just like detoxing from hardcore drugs. The best way to detox is go whole foods and organic.

January Detox Month

I’ve had several friends request my detox program. I don’t do just one kind of detox program, I’ve tried many, researched and built my own program based on what I have in my house, my budget, and my bodies needs. Everyones circumstances are different, think about that if you decide to do a detox. I will post links to some of my favorite authors on detox. You have to know your health, what you can afford and your ability to follow through. If you decide to do a detox you will get to know who you are and all your habits. Habits need to be fed and when you don’t feed them with your attention they usually throw a fit, so get ready for that!

Doing a detox, dropping your well established eating routines will shake-up your daily routines. This will make it easier for you to establish new, healthier daily living and eating routines. All you need to do is pull one little rock out of the wall that’s been blocking your way to better health. That big wall will crumble like a cracker and you can walk on to establishing healthier living habits if you want too. Many folk don’t want to walk into the unknown, this time trust yourself and approach this project with strong determination.  Most of my diet is related to giving my gut flora and fauna a healthy place to live. Science is finding when you have healthy gut flora and fauna everything about your physical and mental health will improve and start healing if you have chronic ill health.

http://articles.mercola.com/sites/articles/archive/2012/06/27/probiotics-gut-health-impact.aspx

I’ve never written my whole detox program down because it changes every time I do a detox. I do three, one month long detoxes every year. A constant with each detox, no caffeine, no meat, no sugar, no processed foods or drinks, no alcohol, and no grains. I try and avoid eating, drinking and doing stressful stuff that will harm my gut flora and fauna. I do eat organic buckwheat, rice, and potatoes for my starches. I will eat my chickens eggs and yogurt with lots of naturally fermented foods. I will eat tons of greens and drink lots of water and herb teas. I avoid most fruits as well. I will post information about why I avoid fruit in a later blog.

Today I am making tofu from organic soybeans I buy in bulk 20lb bags. Still very expensive, however I save about 40% buying bulk. I will post an old blog that goes through the steps of making homemade tofu and soy milk. I have absolutely no problems digesting organic soy as long as I eat some naturally fermented foods with it like kimchee. Just a reminder, people have been eating soybeans for thousands upon thousands of years with no health problems. My guess the problem people are having with soybean now is soybean farming practices, factory production, and genetic manipulation causing huge amounts of toxins that we ingest along with the soybean, which destroys our guts ability to digest and upsets our endocrine system.

I will be posting my food recipes and exercise routine every day. This is for you Birdie xox

Fall Cooking Adventures

Every evening I steam a bunch of squash for part of our chickens food called mash, which I make the next morning. I mash-up the steamed squash and add dinner leftovers plus grain. I set the grain in water for two hours, rinse and let sit overnight. This starts the process of sprouting and is easier for our chickens to digest. The chickens also free-range for their greens and protein, grass and bugs are their favorite food. I’ve never had a healthier bunch of chickens. Much of the food my chickens eat is free from our garden and lawn. I buy bulk grain from our local organic farmers and share it with my chickens, buying bulk saves a lot of money. When it starts snowing I will also share our garden greens. Chickens need greens as much as humans do. We also use squash and pumpkin pulp for stews, soups, noodles, bread, cookies, and biscuits.

I read that squash and pumpkins are a super food because of the orange color, fiber, micro nutrients and minerals. I think this is why our chickens are so healthy for the last 3 years. My first year, out of the 4 years I have raised chickens, I lost many chickens to the flu. I did some research and found their food sources have become polluted just like humans with herbicides and pesticides that kill gut bacteria. Gut bacteria, yeast, fungus help break down the food we eat, this is the same for any animal including my chickens. Their immune system is in their gut just like humans. I haven’t lost a chicken to illness since I started feeding them organic and from my garden.

Once a week my Husband and I take turns grinding grain for bread, biscuits, and cookies. He will grind grain without complaining for cookies. I think it’s an excellent trade! I am still figuring out the proper ratio of yeast and other ingredients that will make a great yeasty bread. I found adding fruit pulp, vinegar, yogurt really help the yeast thrive and helps the flour soften and stretch when kneading. Making bread from fresh hand milled flour is different from store-bought flour. I think the difference has to do with the extreme processing factory flour goes through. All the nutrients are stripped out through chemical processing and the grain is ground very finely, so fine that the flour will turn into cement like goo in our digestive system if we can’t digest it. Also fresh ground grain will go rancid within a few hours if left at room temperature. If I have any wheat flour left over I pop it in a plastic bag and stick it in the freezer. I also make flour from buckwheat. It is much easier to grind and sift, plus the flour does not go rancid like wheat. Although the buckwheat flour will mold if it has any moisture. I usually place buckwheat flour in a jar or bag and store it in the fridge if I don’t use it right away. It also makes a great thickener for sauces, stews, and soups.

Still working on perfecting a pizza. My husband loved this one made with sausage, peppers, tomato paste, garlic, onions, mozzarella and cheddar cheese. I strained out all the liquid from some steamed canned tomatoes and made a lovely tomato paste. Our Garden tomatoes came in a variety of colors. The paste and sauces aren’t bright red like store-bought tomato products. After I add all the spices the end product taste better than the factory processed item.

Fall and Winter Workout

Banish fatigue, mental fog, fat, and stiffness through using your body as the gym! No need for a gym during the winter weather here in rural Oregon. No need for fancy equipment either, use what you have.

For cardio Jillian Michaels workout videos are my favorite. They are short and intense. In my thirties and early forties I was a long distance runner before I hurt my back and lost the use of my right leg. I am slowly working my way back to running. By next year I will be hitting the roads. It’s been a ten-year journey figuring out how to heal my back and get back into shape while dealing with chronic fatigue and fibromyalgia. I think chronic fatigue, fibro, and my back injury happened because of a chronic lack of nutrition caused by my medicine, fast and processed foods and genetically modified foods present in processed and fast foods. Eating healthy and healing my digestive system has been my primary focus. Without a healthy gut I can’t absorb all the healthy organic food I’ve been growing. Without proper nutrition the body cannot heal and protect itself. This also takes a toll on mental health and cognitive functions.

Everyday, five days a week, I do a workout for at least a hour. Once a month I change my cardio for a new routine to avoid boredom and my body getting used to the routine. I will still work in the gardens weather permitting. Mostly weeding, the weeds never stop here!

When the spring comes and I start planting the garden I will be in fighting shape! Benefits gained, saving money on healthcare. Staying active I don’t get the flu or colds or if I do, sickness last a couple of days rather than a couple of weeks. I avoid depression and fatigue, I am speaking from experience here. It seems being creative I walk the edge of emotional highs and lows. Working out evens my physical body and emotions out. Also I feel really good about myself. Through the month I go through high energy days and low energy days. I craft my workouts to fit into this monthly cycle.

I am in my mid-fifties and want to find out what it means to be fifty and in great shape as a fifty year old. I don’t want to look young and sexy. That’s exhausting from what I remember. I will be posting another article on my detox program. Everyone is different so will your nutritional needs, workouts, and detox program. I am sharing mine with links per request from a friend.<3

CDC whistleblower: also a player in the vaccine-mercury-autism fraud

by Jon Rappoport

October 24, 2014

NoMoreFakeNews.com

Anyone who’s awake knows by now that William Thompson, CDC scientist and whistleblower, has admitted egregious fraud.

He and his colleagues, in a famous 2004 study, gave the MMR vaccine a free pass and pretended it had no connection to autism—when it did.

Here is another study on which Thompson was a co-author: “Thimerosal [mercury] exposure [from vaccines] in early life and neuropsychological outcomes 7-10 years later.” (J Pediatr Psychol, Jan-Feb 2012)

Obviously, this is a key piece of research, because a) mercury is known potent neurotoxin; b) parents of autistic children have been, for many years, telling anyone who would listen that their kids withdrew from the world after receiving a shot containing mercury; and c) the US government has been claiming, over and over, that mercury in vaccines has absolutely no connection…

DIY Probiotic For Your Health

Do it yourself fermented foods have not only restored my gut health, they have also chased away my fatigue and cognitive fog/depression I’ve battled with for years. Most important, gut health is immune system health. With rising costs of healthcare and strange illness our immune system does not know, showing up through our open border policy, we need a healthy immune system. Here is the secret about why probiotic from naturally fermented foods are little miracle workers.

“Within this one side dish there are 12 strains of Lactobacillus acquired through the fermentation process- and all 12 were “able to survive gastrointestinal conditions simulating stomach and duodenum passage”. Furthermore, these strains had a higher adherence to the gut than a Lactobacillus strain (rhamnosus GG) that’s already being used commercially as a probiotic. >>Click here for my feature in Total Beauty Magazine: Believe in Bacteria<< Though L. rhamnosus isn’t a slacker strain, as all 7 of its sub-strains proved to have good survival rates in simulated gastric and duodenal digestion. Kimchi’s strains weren’t just able to survive however; they all showed antimicrobial capabilities to numerous food borne pathogens and have even demonstrated the ability to lower cholesterol in at least 2 separate studies. Kimchi related strains have also been found to combat obesity and improve allergic dermatitis induced by chemicals in mice. It’s basically a super food- and there’s no guarantee a supplemental equivalent would be able to provide as many benefits as one serving of this Korean staple. No wonder they eat it as frequently as they do! The health benefits are well worth it. Link to Article

New study reveals that every single junk food meal damages your arteries

I am so glad I stopped eating this crap 20 years ago! Don’t get me wrong, I still ate processed foods and until recently stopped at one of our local burger joints once a month as a treat. The food taste so bad now it’s not a treat and it makes me sick almost immediately. I am now off all processed foods and kicked my sugar habit. I feel so good! I will not shop the big brand-name places like Burger-King or McDonalds. I support our local small businesses. Took some time for me to figure out most processed foods are as bad as fast foods…our conveniences are killing us..

Mediterranean meals do not have the same effect

A single junk food meal – composed mainly of saturated fat – is detrimental to the health of the arteries, while no damage occurs after consuming a Mediterranean meal rich in good fats such as mono-and polyunsaturated fatty acids, according to researchers at the University of Montreal-affiliated ÉPIC Center of the Montreal Heart Institute. The Mediterranean meal may even have a positive effect on the arteries. The findings are being presented at the Canadian Cardiovascular Congress, which runs in Toronto until Wednesday, by the head of the study, Dr. Anil Nigam, Director of Research at the Cardiovascular Prevention and Rehabilitation Centre (ÉPIC) and associate professor at the university’s Faculty of Medicine.

Ebola hoax: the feared “bleeding” symptom

I didn’t know bleeding could be caused from antibiotics. That explains blood in my urine tests for years! I used to get bladder infections and pneumonia a couple times a year, I was given antibiotics. It’s been over 20 years since I’ve used antibiotics or been in for bladder or lung infections.

Ebola hoax: the feared “bleeding” symptom

By Jon Rappoport
October 19, 2014
http://www.nomorefakenews.com

As I’ve demonstrated in several articles, the diagnostic tests for Ebola are unreliable and useless.

What does this mean?

It means that, for any patient labeled “Ebola,” there is no verification. No confirmation. None. Zero.

Asserting the patient “has Ebola” is meaningless, because there is no concrete evidence.

Once you remove the Ebola virus from the equation, all you have left is symptoms. Symptoms in West Africans, and in those few people in the US and Europe who are labeled with “Ebola.”

Symptoms like diarrhea, fever, cough, fatigue, vomiting, bleeding.

Obviously, these symptoms can result from a number of different causes, none of which needs to be a virus.

Let’s take bleeding, for example.

This is the hyped symptom that evokes the most fear, and convinces people that these patients “must be different and unique. They could…

Honeysuckle Targets Viruses.. Researchers call it a ‘Virological penicillin’ MIR2911

I have a bunch of honeysuckle growing in a corner of my garden!

ClinicalNews.Org

Honeysuckle, clinical tests may of just confirmed it is a powerful virus killer. MIR2911
– In a new study, Chen-Yu Zhang’s group at Nanjing University present an extremely novel finding that a plant microRNA, MIR2911, which is enriched in honeysuckle, directly targets influenza A viruses (IAV) including H1N1, H5N1 and H7N9. Drinking of honeysuckle soup can prevent IAV infection and reduce H5N1-induced mice death.
– Furthermore, one of their ongoing studies shows that MIR2911 also directly targets Ebola virus, which is pandemic in West Africa and is becoming a crisis of public health. Thus, MIR2911 is able to serve as the “virological penicillin” to directly target various viruses.

Roasted Squash & Pumpkin Seeds

Roasted squash and pumpkin seeds taste better than popcorn! Also they have more protein, super good fats, minerals, and vitamins than corn.

I like to boil my seeds after washing them off. Strain the water off, stick them in a bowl, add some butter and salt, stir up, and eat them this way. It’s really easy to squash the seed out with your teeth after boiling them for 30 minutes. After I eat my fill of boiled seeds I stick the leftovers in an oven at 350 degrees until they are crispy. Usually 20-45 minutes depending on the seed and how many you are roasting.

You can crack the seed and just eat the kernel or you can eat shell, kernel and all. My husband had never eaten pumpkin or squash seeds and was very reluctant. He is ruled by his nose…with the salt and butter the seeds smell just like popcorn. They crunch just like popcorn and taste better than popcorn. You can also make carmel covered seeds. My husband requested the carmel covering, it’s his favorite type of popcorn. He figured the seeds would also taste yummy. I will report back on this next project.

If you are looking for good fats like the omegas these seeds pack a lot in a small package. http://nutritiondata.self.com/facts/nut-and-seed-products/3141/2

There is a silent pandemic sweeping many parts of the northern world. In fact, the information in this article may be the most important information of the year for you and your family, according to Dr. Mercola. He is an osteopathic physician who has made it his life?s intent to provide the public with the most up-to-date information regarding personal health, beyond the lies of the conventional health care system.

In his one-hour lecture available on his website, Mercola states that vitamin D is one of the most widely misunderstood nutrients today, and that proper systemic levels of vitamin D has the ability to prevent and eradicate an impressively large list of diseases.

There are only about 30,000 genes in your body and vitamin D has been shown to influence about 3,000 of them.

That is one of the primary reasons it influences so many diseases, from cancer

Kimchi And My Gut…

If you are in chronic pain and can’t seem to heal this maybe the reason why.

The doctors called my fatigue, asthma, skin rashes, chronic bladder infections, depression/panic attacks, fibromyalgia. I was told to go to therapy for my panic attacks and take antidepressants. I was given inhalers for my asthma and Retin A for acne like skin rashes. I was on antibiotics several times a year for bladder and lung infections. All that medication is poison to your gut flora and fauna. No one told me I was killing my gut by taken this medication.

Not once was I asked by any of my doctors about my diet. We did talk about my relationships with family.  I had horrible very dysfunctional relationships with family. Maybe I was clinging to my past and had horrible toxic relationships and that was causing all my physical problems. Nothing really seemed to work no matter what medication I took or how much therapy I went too. Plus I was getting really fat, my bones and joints were falling apart and that made everything depressing because I was in constant pain. My back was totally screwed, disks bulging and cutting off nerves in my leg so I couldn’t walk. I was fat, tired, sick, my feet hurt all the time! Come to find out years later, thyroid was going out, pancreas and gallbladder weren’t functioning correctly. No matter how healthy I ate I was not digesting and absorbing the nutrition I took in.

I finally figured I would be the one who had to fix myself because my doctors and medication seemed to make everything worse. So I walked away from allopathic medicine and psychology. I started researching and reading alternative data about physical and mental health. It’s been a twenty year journey to find my health. I learned a lot along the way and made many mistakes. I learned a lot from my mistakes too. What did I learn? How healthy we are is all about gut health, even the mind is tied to gut health. If you can’t absorb your minerals because your gut is all screwed up your mind will go friggen crazy!

I learned to meditate figuring that will help my mind out, I won’t be so tired and moody. I can samadhi all over the universe, sit so still I disappear, generate all sorts of compassion and loving kindness (being sarcastic here) but eventually I have to get off the cushion and live my life. You could have the most wonderful relationships, be sitting on top of the world without a worry but if your gut isn’t healthy it’s all going to go down the toilet with lots of smelly farts to stink up everything. Meditating in a big Dharma hall with lots of people, one is full of gas, stinky farts that curl the hair in one’s nostrils really challenges one’s equanimity. I have butt loads of equanimity now…ha!

Your gut has a whole world of little beings living in it that help you digest the food you eat. If they are out of balance your world will be out of balance too! Sitting in retreat I got to see the body is like a universe and it is full of the most amazing beings. It’s funny how I feel like I am just one being, but really the I that I call me is made up of billions of different little beings and if given the right information function perfectly together. It’s amazing how everything I call me works as one. Too bad humans couldn’t work together that way. Maybe they could if given the right data and nutrition. http://articles.mercola.com/sites/articles/archive/2012/09/05/microbes-manipulate-your-mind.aspx

Most of the ingredients came from our garden.

This is the recipe I used…well kind of, I added extra stuff to my taste… If you want to know my recipe, just ask and I’ll post it. This recipe is very easy and well written out, easy to follow directions http://yumuniverse.com/fermented-vegetables-make-your-own-kimchi/

Oregano and Lemon Balm

Dryingherbs

Oregano and Lemon Balm Herbs almost dry ready to be stored in glass quart Mason jars. I strip the leaves off and stuff them in nice clean mason jar. I use the herbs for seasoning, teas, and make a mix for home-grown tobacco cigarettes. Yes I occasionally smoke herbs, but not marijuana. I can’t handle pot, makes me feel very sick. But I can smoke my home-grown tobacco and herb mix, which has no pesticides, herbicides or other chemicals that commercial products are laced with! Also I am making Oregano oil. Super easy to do, I will post the process once the oil has been filtered. People say it is really difficult to cure and dry tobacco for smoking. It’s not that difficult. I will post a blog this fall about curing tobacco.

Oregano Oil as antibiotic and anti-inflammatory agent.
http://www.globalhealingcenter.com/natural-health/oregano-oil/

Lemon balm is most commonly used for digestive issues, insomnia, anxiety and immunity. It can be taken in the form of infused teas in the range of 1.5 to 4.5 grams of lemon balm taken two to four times daily. It can also be taken in a tincture of 2-3 mL (roughly 20 drops) three times daily. Many others choose to steep 2 to 4 tablespoons of the crushed leaf in a cup of boiling water.

Preparation of Herbs into Palatable Smoking Mixtures

A number of factors contribute to making a palatable smoking mixture. First and foremost is the way you cure the herbs. If you take fresh Tobacco and dry it like any medicinal herb, it becomes an unpalatable obnoxious smoke that the most hard-core smoker couldn’t stomach (or lung, as the case may be). Tobacco is semi-dried slowly, allowing for chemical changes, and is never dried to a crisp. It is packaged slightly moist in air tight containers. If it dries out, the smoker adds an apple slice or sprays it with water. Dried out Tobacco is harsh.

Raw Milk Yogurt

One of my favorites. I think I will stop by and pick up some raw-milk today. I haven’t made yogurt for several years. I used raw-milk as part of my detox regime 4 years ago when we first moved to our hobby farm. I buy my milk from a lovely 3 cow small farm down the road. The ladies name is Mary. Maybe I will do a blog about Mary’s farm and her family. She and her Husband Dave have 3 kids that are almost finished with high school. The girls have a herd of goats they sell cheese and goat milk. Mary takes care of the milk cows. Dave takes care of the huge flock of chickens, he sells eggs and they also butcher chickens, hogs, and steers.

Scratch Living

Starting Your Raw Milk Yogurt

  • 1 gallon of raw milk
  • Pan large enough to hold a gallon of raw milk
  • “Room Temperature” six ounces of plain yogurt with active probiotic culture
  • Blender or something to throughly stir probiotic culture into warm raw milk
  • Thermometer for measuring box temperature and raw milk
  • Two, one-half gallon canning jars with lids
  • Cardboard box at least bankers size or bigger, 10 x 12 x 15 Inches. If the box is too big or too small you will not keep an even temperature. At one end of the box you will insert the guts of reading light and a 40 watt light bulb. I use Duck tape on both sides of the box to hold light fixture
  • Fruit Syrup
  • Cheese Cloth
  • String and area to hang string and yogurt in cloth for draining
  • Large bowl to catch liquid draining from yogurt.

Last Years Backyard Garden Dent Corn

I made corn tortillas from scratch. I mean really from scratch! I grew the corn myself. Dried the cobs, pulled the kernels from the cob. Now that’s really from scratch. Growing corn to feed a family of two is just too much work. I need a bigger corn bed and someplace to dry the corn. From start to finish corn takes a lot of work. Potatoes are much easier to grow and store here in the Oregon Cascades.

This slideshow requires JavaScript.

I found out through research you need to do several things before you start grinding the corn. One, you need to soak the corn in quicklime. If you don’t you will get a horrible tasting flour that makes really brittle nasty baked goods. I found out the hard way. Secondly, the quicklime process releases important life saving nutrients and vitamins. If the majority of your calories comes from corn and you don’t use quicklime or another alkaline substance for Nixtamalization you will suffer from Pellagra. It’s a horrible condition in which one’s body slowly falls apart and one’s mind goes crazy. This condition can be brought on through other types of poor nutrition, genetic problems, and drinking too much booze.
